Yeah, I know... great name - the Classic Shun Knife... but really, it is a Classic and is therefore the most classic of the Shun Knives.Now, this knife is aimed directly at the enthusiast home chef, like myself. Again, their the most popular of the Shun Knives and they outsell all other Shun Knife lines combined. Chances are if you know someone that has a Shun or have friends who own a Shun Knife, odds are they own a Shun Classic. This knife uses a Japanese steel called VG-10, which is much harder and sharper than most European steels. I think many would agree with me when I say the sharpness of a Shun Knife is unsurmountable. I mean these things are frickin' sharp. *laughs* But, again, most people would agree with me that coupled with the extreme sharpness, this knife has a lightweight feel and traditional western handle that makes for an excellent combination. The attractive Damascus pattern on the blade has a unique look like a wood grain of some sort. It's pretty cool. You might be able to see that in this picture. They also have a D Shaped handle... or as some would say - a teardrop handle. You can see from this picture the uniqueness of the handle. This is obviously really cool, but it also serves very well to comfort. Because of the design they fit extremely comfortably in the hand. However, all of these advantages also bring few disadvantages. For example, this design tends to be biased when it comes to hand grip... or style... or whatever. What I mean is they are either right-handed or left-handed. This can be inconvenient with households who have both a right-handed and left-handed chef because you'd almost have to buy two sets - one right-handed and one left-handed. Considering the price of these badboys, that can get rather costly and inconvenient. However, most people can make due and are either or.Speaking of price... that can be another downfall for people because Shun Knives are not cheap in any sense of the word. Some would argue that they are rather expensive. And it's true for the most part considering an 8" Classic Chef Shun Knife starts around the $100 dollar mark. Granted, however, when the maker of these knives produced the Shun Knife they purposely intended that they be made with premium materials and offer premium performance which should demand a premium price. And believe the testimonials that they certainly deliver on that intention.Alright, so I think we've covered the Classic Shun Knife in this episode, so next time we'll be talking about the Elite Shun Knife. As I've already noted in my first uploads of the series, all the five one-acters have, at the very least, an aria for the heroine. Actually, in "L'occasione fa il ladro" Berenice gets two full arias, but, then, the latter is different from the others. I've already posted Fanny's aria from "La cambiale", and now I decided to post Sofia's delightful aria from "Il signor Bruschino".All the heroines' arias (with the possible exception of Berenice's simple opening cavatina) are set to the classical structure of "cantabile - cabaletta" and mostly deal with the heroine's love for the tenor. Sofia's aria isn't really different in this respect. But, interestingly enough, Sofia sings it to further confuse the old Bruschino who is made to believe that Fioriville in disguise is his offspring. But the aria itself fully discloses Sofia's love for the young lad. Even though she too deceives the old man, the sentiment is true. The cantabile is meltingly gentle with excellent writing for a solo English horn. The subsequent tempo di mezzo and cabaletta find the young girl asking Bruschino to stop his folly and accept "his son". For my tastes, the cabaletta is taken a bit too fast to be truly effective (the conductor is Ion Marin who is well-known for his preferences of fast tempos) but the music is extremely attractive and charming.Kathleen Battle takes up the role of Sofia and succeeds in many respects. Here is another piece from Auber's comic masterpiece, "Fra Diavolo", this time a barcarolle/serenade for the tenor antihero.The piece is written in the classic couplet form: a succession of two identical sections with the repeat to be decorated with additional ornamentation (as it is, thankfully, in the present rendition). Narratively, it's actually a secret signal of Fra Diavolo to his accomplices as they prepare to rob the Lord who is staying in the inn belonging to Zerlina's father. The song itself is about a young girl who is always protected by her grandmother from any visitors. But, thankfully, it is night, and the old woman has fallen asleep. The girl asks her lover why is he not near her at such a prosperous moment. The piece is very attractive, and I do think that it would form a wonderful part of any recital for a tenor. Here we get the great Dano Raffanti as he sings his heart out (he even characterizes very well) as the immoral Fra Diavolo. Enjoy :)! [ More Detail ]
